Nutella Banana Muffins


A keeper this one.

All-purpose flour--2 cups
Sugar (powdered)--11/4 cups
Baking soda--3/4 tsp
Mashed banana-11/2 cups
Plain curd--1/4 cup
Eggs (large)--2, beaten lightly
Butter (salted)--6 tbsp, melted and cooled
Vanilla extract--1 tsp
Walnuts (toasted and coarsely chopped)--1/4 cup
Nutella--1/2 cup


Strain flour and baking soda together. Combine it with sugar in a large bowl. Keep aside.
Mix mashed bananas, butter, curd, eggs and vanilla essence in a medium bowl with a wooden spoon.
Fold the banana mixture into the dry ingredients and mix to form a chunky mass. Fold in the walnuts.
Drop the batter into the prepared muffin trays in equal quantities and place one-two teaspoons of nutella on each (I put two tsps; but if you want a more pronounced taste of the banana keep it at one tsp.). Swirl with a toothpick.
Bake for about 25 mins or till a toothpick inserted in the centre comes out clean.

Yummy nutella , I love to eat straight from the jar so I don't buy it anymore coz my waist looks like a jar now ;) . Good pics Thoma .

Oh, gosh, this flavor combination sounds delightful!!!! Perfectly gorgeous muffins!

PS...my ice cream maker has never failed me (as long as the insert was frozen overnight), but some of my recipes have fallen short :/

I think rugelach is pronounded Roo-ga-la. At least that's what I've heard around here...New Yorkers may have a different idea :)

hmm interesting combo. I love anything with banana in it, but ive terrible luck with trying cooking with it. Never ends up nice and it goes straight into the bin. I blame it on the tasteless bananas we get here :)

very tempting muffins.. i usually dont have the patience to save up nutella to make something out of it :) as it gets over in no time thanks to mom and son eating up big globs of it!!! :P
